All of the things that the op mentioned can be turned off in the vehicle settings through the radio

Can you point me to the triple horn setting? Buckle to shift is disabled in settings but it didn’t actually disable it.

I'm pretty sure it's under the keys section of the Vehicle settings. I can get you a pic tomorrow when I'm back in my truck if no one gets to it first. It's definitely there, though.

Any luck finding a menu under keys? I’ve looked everywhere. The sensitivity of the forward car gap is driving me nuts as well!

For ACC? you can lower it from 3 to 2 to 1 bars.

It interrupts the radio and gives three beeps whether ACC is engaged or not. I went to manual cruise and same thing. Even with adjusting the gap it is too sensitive and happens with cruise on and off.
