255/70s (~31's) can fit with a 2" level, besides that at stock height is 265 or 255/65 max without having to cut. In terms of offset for stock wheels (or rims) you'll need to do spacers. A lot of people go with 1.25 or 1.5" spacers usually from bora.

Hello all I tow a camper with a 2018 Canyon 2.8L. My questions are around tire size and potential slight offset for the wheels. all i would want is a One inch taller tire, no wider, and if it would be possible to put on a slightly offset wheel with the stock suspension?
