Has anyone heard a noise like the starter drive not disengaging from the flywheel immediately after starting?

Could be the fuel pump and injectors. On my 17 V6 they are terrible, and normal according to GM. Sounds just like the flat lobe on my old small block 68 Camero.

On a few occasions I've heard something like what you describe, WhiteColly. Kind of a deep, harsh grind a second or so after ignition.

I also, consistently get 5-10 seconds of what sounds like belt squeak when I start it 'cold'. Cold is in quotes since it's summer here and the truck has never actually been cold.
